This month we're heading west. Way west. To Utah, where biochemists make bourbon and the Old West lives on in every bottle.

Started in 2006 by a biochemist who saw whiskey-making as just another fermentation experiment. David Perkins and his wife Jane packed up, moved to Park City, and started distilling in a converted livery stable.

From 250-gallon still to international recognition—turns out biochemists make pretty good bourbon.

They picked Utah for the Old West vibes and the state's forgotten whiskey history. Now they're writing a new chapter.

 

The Fancy Stuff A Midwinter Night’s Dram

Shakespeare meets rye whiskey. This limited release gets finished in port and French oak barrels, creating something that drinks like liquid poetry.

Limited seasonal release, port barrel finished

NOTES: Think Christmas in a glass—dried fruits, baking spices, toffee, with that port sweetness playing nice with spicy rye. Complex enough to sip slow, smooth enough to make you want another.
