You have made it to November: the month where leaves crunch underfoot and our ovens at Palomino have begun their annual transformation into a fiery portal of pastry crusts. If you’ve ever wondered what organized dessert chaos looks like, you’re about to find out. Welcome to Thanksgiving at Palomino!
Our Thanksgiving Origin Story
The Thanksgiving pie craze began back in 2009, before we were a part of Pie Inc. Back in those days, the company consisted of just two locations: Comet and Honeypie. Pie Inc. Founder Valeri Lucks was the only pastry chef crafting every pie by hand. That year, she baked 89 pies in one day!
As the demand for pie grew, so did the need for more space. Enter: Palomino! The restaurant that came with a huge, empty space next to the kitchen. Can you guess what that would be perfect for? We can’t hear your guesses because this is a blog post, so let us tell you. It was the perfect space for our official baking kitchen, which is now known as the Honeypie Bakeshop. Our first Thanksgiving operating here pushed us to an incredible milestone: 1,000 pies baked for the holiday.
What Makes Our Pie Special?
It’s simple! Every pie we make is a reflection of Pie Inc.’s core values: quality, scratch-made food crafted by real people made from local ingredients, which is sure to bring joy to all who consume it.
From buttery crusts to creamy fillings, each element of the pie is hand-crafted at the Honeypie Bakeshop. There are no shortcuts taken around here!
We are proud to support our local food community, too. Our pies feature Wisconsin-made butter, milk, eggs, cream, oats, and seasonal Midwest fruits whenever possible.
It is an honor to serve as a holiday staple for so many families within our community. Whether you’ve been ordering our pies for years or joining the tradition for the first time, we are so grateful to be a small part of your Thanksgiving celebration.
Thanksgiving Pie Ordering Information (AKA: The Most Important Information of This Month)
Here’s how to get your pies this year:
Pickup Location: Honeypie Bakeshop (located inside Palomino)
Pickup Window: Sunday 11/23 to Saturday 11/29
Hours: 9 am to 9 pm daily
Please Note:
Pickups will not be available on Thanksgiving Day, and all of Pie Inc.’s locations will be closed for the day. Our hardworking staff deserves time to eat turkey and argue with their families!
Last year we sold nearly 1,300 pies! Did our bakery staff sleep? Debatable. To maintain high quality (and sanity), a limited menu of flavors will be available for Thanksgiving week. Don’t worry! There’s still plenty to choose from, and even a brand-new flavor is making its debut this year.

Meet the New Pie: Pumpkin Pie Latte
Pumpkin Pie Latte is a new pie flavor to the menu this year, and it is our Pie of the Month at all of our locations. The flavor was collaboratively created by the Honeypie Bakeshop.
Lead Baker Carly added, “I was definitely inspired by the cozy coffee flavors floating through the air this time of the year!”
Inspired by a fall favorite drink, this pie features a cream cheese-based pumpkin pie filling complete with a touch of coffee in our classic shortbread crust. The pie is decorated with a ring of whipped cream and a dusting of cinnamon.
